This Ethiopian disk makes for an excellent meat rub and marinade addition. You can make it as hot or mild as you like – just play with the chilli amount.
Makes about 1/2 cup
Grind the following:
- 1/4 cup dried chillis
- 3/4 teaspoon whole fenugreek
- 6 cardamom pods
- 1/2 teaspoon whole coriander
- 1/2 teaspoon whole cumin
- 1/2 teaspoon whole black peppercorns
- 3 tablespoons paprika
- 1 teaspoon salt
- 1 teaspoon dried ginger
- 1/2 teaspoon dried garlic powder
- 4 cloves
- 3 cm cinnamon stick
- 4 allspice seeds
